The Spinato family has made wine in the Valdobbiadene corner of Treviso since 1952, when Pietro Spinato saw what the Veneto could do with the land lapped by the Piave. Those hills carry UNESCO World Heritage status now. Gocce di Luna, drops of the moon, is the organic member of the family's alcohol-free line. It never ferments at all. Organically farmed white grapes are pressed and given a short cold maceration, then the must is held in sterilised tanks at 0C so alcoholic fermentation can never start. That is the opposite of dealcoholizing a finished wine, and the profile shows it. Crystalline greenish yellow with a fine perlage, apple, white flowers and fresh grape on the nose, then a fresh, slightly tart palate of plum, green apple and white grape. The bottle wears a distinctive pearly white recyclable film. Serve it very cold as an aperitivo, or anywhere you would open a light Prosecco.
