Freixenet has been making sparkling wine in Catalonia since 1861, which is a long runway before arriving at a 0.0 version. This one is built from a blend of classic Spanish varieties, Airen chief among them, vinified properly and then dealcoholised to under 0.05 percent. Tropical fruit leads, citrus sits underneath, and the bubble stays balanced rather than aggressive. Residual sugar is 38 grams per litre, which is worth knowing going in. Dealcoholised sparklings generally carry more sweetness than their alcoholic equivalents, because sugar replaces some of the body the alcohol took with it. Serve it properly cold, 5 to 7 degrees Celsius, and put it next to goat cheese salad, poultry or sushi. Suitable for vegetarian and vegan diets.
