Crisp and fresh rather than fruity, young and unoaked, finished under 0.05 percent alcohol and kept low in calories. Freixenet calls itself a pioneer in alcohol-removed wine, and the still white is where that experience is easiest to taste. It does not chase the weight of a real white so much as lean into acidity and freshness, which is the more honest strategy for a dealcoholised bottle. Serve it very cold, 4 to 6 degrees Celsius.
