The vinegar is the interesting part. GUUBII builds this aperitif on de-alcoholised Riesling, about 95% of the bottle, and finishes it with a red wine vinegar creation that is made only once a year: herbal red wine vinegar matured in wooden barrels, then refined with freshly harvested elderflower, sun ripened lemons and a small amount of cane sugar. No artificial additives go in. In the glass it reads light rose with a fine perlage. Elderflower and lemon arrive first, herbs and a touch of spice sit behind them, and a finely tart acidity keeps the fruit from tipping into sweetness. Serve it well chilled with a twist of lemon or orange, over ice if you like, alongside antipasti, tapas, sushi or a light salad. It is German, 0.0% alcohol, and it carries sulfites like the wine it started out as.
