Three grapes go into the blend. Merlot rosé at 40 percent, then Cabernet Sauvignon and Petite Sirah at 30 percent each, fermented as real wine from California coast fruit and dealcoholized afterward. Petite Sirah is the smart addition, since it carries the tannin and dark color that most alcohol-free reds simply don't have. You get raspberry and plum first, black currant and a wisp of smoke behind that, then vanilla, oak and a little spice on the way out. The ingredient list is unusual for a wine. Alongside the dealcoholized red there's prebiotic fiber, vegetable glycerin, L-theanine from green tea and pink Himalayan salt, which is Surely leaning into the functional side of the category. It works out to 25 calories a glass with zero sugar, 750ml, 0.5% ABV. Put it where you'd put a real red, so grilled steak, pizza, pasta, dark chocolate, brie or blue cheese.
