Sparkling

Bubbles made from Muscat of Alexandria, at 0.0% alcohol. Torres builds the base wine the way it builds any wine, lets the natural sugars ferment out, cleans it up through clarification and filtration, then draws the alcohol off physically at the end so the Muscat aromatics make it into the glass intact. It is arguably the most useful bottle in the Natureo range, for the simple reason that sparkling wine does more social work than any other style. Someone arrives, something gets announced, a Tuesday afternoon needs marking. A cold bottle of this in the fridge means nobody has to explain why they are not drinking. Serve it at 8 to 10 degrees. It works with appetizers, fish, seafood and rice dishes, and stands up perfectly well on its own as an aperitif. Familia Torres has been refining dealcoholized wine in Penedès since 2008.
