Cypher's white is made from organically farmed grapes in the Gard, in the south of France, vinified the traditional way first and only then gently dealcoholized so the aromatics survive the process. Roussanne and Colombard are the varieties behind it, and the result leans exotic rather than austere, opening ample and silky around fresh pineapple, passion fruit and lychee before a refreshing tension pulls the finish back into line. That tension is the whole trick. Without acidity a dealcoholized white turns into fruit juice, and this one stays taut. It works as an aperitif and holds up next to seafood. The wine is 0% alcohol at 12 calories per 100ml, sold in 75cl bottles and small cans, and made entirely in France. Chill it hard and treat it like any dry white you would open before dinner.
