The nose gives away very little at first, then the palate arrives wide and concentrated, closer in style to a Japanese aesthetic than to the usual pale Provencal template. Lychee and rose water line the mouth before a juicy, refreshing finish. Grenache is the grape, grown organically in the Gard in southern France, and Cypher vinifies the wine traditionally before removing the alcohol gently enough to keep those delicate aromatics intact. That order matters. Wine made properly first and dealcoholized second tastes like wine, while wine engineered from the start to be alcohol-free rarely does. It finishes at 0% alcohol and 12 calories per 100ml, which is a fraction of a normal glass. Sold in 75cl bottles and cans. Serve it very cold with tapas, cheese or a warm afternoon.
