Pale pink and deliberately delicate, Elan is the summer bottle in the Wednesday's Domaine range. Summer fruit notes sit over a line of refreshing acidity, and the whole thing stays light rather than trying to convince you it is a big rosé. It starts as a fully fermented wine from La Mancha in central Spain, then goes through gentle de-alcoholisation before grape must, elderflower and ginger juices are blended back in to replace the texture the alcohol carried. At 9.4 calories per 100 ml, a full 750 ml bottle lands near 70, making it the lightest of the still wines the brand makes. It is vegan and contains sulphites. Drink it very cold on a hot afternoon, with salad, grilled fish or anything you would put a Provence rosé next to.
