The starting point is Verdejo, picked in La Mancha and fermented into a full wine before the alcohol is taken out. From there Wednesday's Domaine blends in grape must along with elderflower, ginger and lemon juice, then holds the wine in tank under pressure for a minimum of 24 hours to build its bubbles. Citrus dominates the finished glass, sharp and clean, which is what the brand means when it calls this one zip and zing. It is also the lightest thing in the range at 48 calories and 12 g of sugar across a 750 ml bottle. Suitable for vegans, contains sulphites.
