Fine bubbles are difficult to get right in an alcohol free sparkling wine, and the persistence of the bead here is the first thing worth noticing. This is a sparkling Zinfandel rose, crisp and dry rather than sweet, with a steady stream of very small bubbles. Tart cherry, pink grapefruit and white peach come through on the palate, held together by a mineral edge and a subtle saline note that keeps the finish long and clean. That salinity is what lets it work with food rather than only as a toast. Missing Thorn is made in Napa by winemaker Aaron Pott and vintner Stephanie Honig, starting from fully fermented wine and removing alcohol through a gentle distillation. Serve it thoroughly chilled in a flute or a white wine glass. Under 0.5 percent alcohol, low sugar, vegan and gluten free.
