Riesling is a smart choice for a dealcoholized white, since its acidity and aromatics do the work alcohol would otherwise be carrying. This one is pale gold, young and fresh looking, with white nectarine, pear and citrus blossom on the nose. The palate brings honeycomb, lemon and red grapefruit, finishing crisp and long enough to make you want the next sip. It stays on the dry side rather than sliding sweet, which is where a lot of alcohol free whites lose the plot. Missing Thorn comes out of Napa, a collaboration between winemaker Aaron Pott and vintner Stephanie Honig, built from fully fermented wine that is then gently distilled to remove alcohol. Around 15 calories a serving, under 0.5 percent alcohol, vegan and gluten free. Serve it cold with shellfish, salads or something carrying a bit of chilli.
