Eisberg's Selection tier is the step up from the Signature bottles, and the Pinot Noir is the one that shows why. Blackcurrant, cherry and sweet spice, light in body, more finesse than force. It also runs remarkably lean at about 14 calories per 125ml glass with 3g of sugar per 100ml, roughly half what the Signature reds carry. The alcohol comes out by vacuum distillation, where the lowered boiling point lets it evaporate near 32°C and leaves the aroma compounds mostly intact. That gentleness matters more for Pinot than for heavier grapes, because delicacy is the entire point of the variety. Final ABV is 0.0% and it is vegan. Serve it cool, 5 to 7°C, the way you would treat a light red anyway. 750ml bottle.
