Gooseberry is the marker for Sauvignon Blanc, and it survives the dealcoholization here, backed by tropical fruit and a genuinely aromatic nose. That matters, because aroma is usually the first casualty when alcohol comes out of wine. Eisberg's answer is vacuum distillation. Drop the pressure, drop the boiling point, and the alcohol evaporates at around 32°C instead of being boiled off, which leaves most of the volatile compounds intact. The finished drink is 0.0% ABV and vegan, at roughly 29 calories per 125ml with 5g of sugar per 100ml. Drink it properly cold, 5 to 7°C.
