Red is where alcohol removal usually shows itself, so an organic Merlot is a fair test of the process. Lussory ferments this one as a Spanish red from ecologically farmed grapes, no pesticides or artificial chemicals involved, then takes it down to 0.0%. What lands in the glass is red fruit and plum with a spiced edge, soft tannins, light structure and a finish that carries longer than most de-alcoholised reds manage. Treat it as a table wine. Meat, cheese, charcuterie and traditional Spanish cooking are the producer's suggestions, and it does considerably better with food than on its own. Bottles are 750ml. Lussory is made by Dismark Products in Santiago de Compostela, Galicia, and the organic line is certified rather than simply described that way on the label.
