Where the Airen bottling leans on Spain's own workhorse white, this one reaches for the most recognisable white grape in the world. It is built the same way, fermented into a complete wine and then dealcoholised, so the varietal white-fruit and citrus character comes through the process rather than being added back at the end. Everything structural carries over from the range. Halal certification across the whole 0.0 line, gluten free, low in calories, and the polyphenols of the original wine retained. It comes from Dismark Products in Santiago de Compostela and ships as 750ml bottles by the case. Serve it at 7 to 9 degrees Celsius, cold enough to keep the acidity forward.
