Lussory Organic Sparkling

Organic farming and bubbles is a rarer combination than it should be in the zero alcohol aisle. This one starts with ecologically farmed grapes, no pesticides or artificial chemicals, and is de-alcoholised to 0.0% after fermentation so the wine character survives the process. Citrus and green apple lead, white flowers sit behind them, and the bubble is fine rather than aggressive. Pour it as an aperitif, with shellfish, with dessert, or for the toast itself, which is where a 0.0% bottle earns its keep because nobody has to opt out of the moment. It is Spanish, made by Dismark Products in Santiago de Compostela, sold in 750ml bottles and Halal certified like the rest of the Lussory range. Serve it at 7 to 9C, cold enough to keep the mousse tight.
