Prestige Blanc de Blancs

Blanc de blancs means the wine comes from white grapes only, and here that's Chardonnay doing all the talking. The nose reads as textbook Chardonnay, lemon and pear and fresh pineapple with a vanilla and toasted edge underneath. The attack is lively, the bubble fine and dynamic, and lemon and toast come back through the finish with real length. Vintense compares it to a lightly dosed blanc de blancs rather than anything sweeter, which tracks. Alcohol comes out by vacuum distillation at 25 to 30°C, low enough that the delicate lactic and toasty notes make it through intact. In Belgium this is a hospitality-trade bottling sold through wine merchants and the brand's own shop rather than supermarkets. Serve at 8 to 10°C with mushroom risotto, seared scallops, fish in a cream sauce, or tarragon chicken. It runs 14 calories per 100ml and is vegan and gluten free.
