Pear and apple are what a prosecco is supposed to taste like, and that's what shows up. This one pours straw coloured with subtle green hues, the nose is bright with citrus notes of apple and pear, and a crisp citrus tang closes it out. There's no residual sweetness papering over a gap, which is the usual tell in this category. The grapes are grown in Victoria and spinning cone technology removes the alcohol after fermentation, taking the wine to 0.5% without cooking off its aromatics. Brown Brothers is explicit that this is not one to keep. Drink it on release while it's fresh and lively. Pair it with light seafood like whiting fillets or fresh prawns, or with camembert and your favourite crackers if you want something with more weight.
