Mustard and watercress are not obvious drinks ingredients, which is exactly why this one works. Their extracts are tart and faintly bitter, and they cut against a base of seedling apple juice that would otherwise read as sweet. Rhubarb layers on a little more acid. What comes through on the nose is ripe, spicy apple with an earthy edge from the mustard leaf and a woody barrique note underneath. The palate is acid-driven, with a fine caramel note through the middle and a long finish that turns quietly hot and spiced rather than sugary. Apple juice makes up 93 percent of the bottle, all from Swabian WiesenObst orchards, with mustard at half a percent. This is built for food rather than sipping, so try it with curry and coriander, pan-fried white fish, or lightly smoked oily fish. Serve at 8 to 10°C.
