Rose and apple on their own struck the house as unbalanced, so chocolate mint went in to fix it. It's a high-menthol variety, and it does the lifting on the nose that rose alone can't manage. Raspberry and blackberry then fill out the middle and supply the colour, which lands as a proper deep rosé rather than a blush. The petals come from the Sonnenhof in Bad Boll, with organic rose water used to fine-tune the balance. Boskoop apple makes up 90 percent of the bottle and brings the sharp acidity that keeps the whole thing from smelling like a candle. Raspberry leads on the palate, the middle turns spicy, and the finish runs long. Serve at 8 to 10°C. It's built for tabbouleh with mint, lamb with couscous and raisins, or a chocolate raspberry tart. 45 calories per 100ml.
