Quince is the quiet piece here. It isn't a fruit that shows up much on its own, but its mild bitterness gives this dark cuvée a spine that sour cherry and blackcurrant would otherwise flatten. Lime concentrate sharpens the top end. The nose is dense and dark, sour cherry and blackcurrant and elderberry with a fresh citrus lift running across it. On the palate those same berries carry through, then the acidity kicks in and the quince and lime pull the finish dry. Bubbles are fine rather than aggressive. Apple juice is the base at 50 percent with pear behind it, and the colour sits close to black cherry. At 50 calories per 100ml this is the fullest of the classic range. Serve at 8 to 10°C as an apéritif, alongside game with lingonberries, or with a dark chocolate and forest berry dessert.
