Pear tannins do more work here than you would expect from something described as light and breezy. They give the drink its grip, and ground green oat fills out the finish, which is also why this bottle contains gluten. Worth knowing if you're avoiding it. The recipe is 95 percent pear juice. Chamomile and linden blossom waters go in at two tenths of a percent each, enough to carry a summery floral top note without tipping into tea. The palate reads soft and ripe with a subtle bitter edge rather than a sugar rush. Drink it at 8 to 10°C. It pairs with mild leaf salads topped with goat cheese and caramelised pear, ripe blue cheese alongside pear jelly, or summer rhubarb desserts.
