Give the bottle a gentle swirl before you pour. Sea buckthorn carries natural oils that separate over time and gather in the neck, and moving the bottle puts them back where they belong. The cloudiness is deliberate too, since this one goes out unfiltered. Structure comes from plant material only, pectin and carob seed flour used sparingly, rather than anything that would flatten the sea buckthorn or the tea. The base is 42 percent dealcoholized wine with sea buckthorn at 10 percent, plus apple, grape, pineapple and lime. The pepper is what makes it unusual. Andaliman and Sichuan pepper sit under lemongrass and Sencha green tea, so the sweetness stays restrained and the finish turns warm and faintly mineral instead of sugary. At 16 calories per 100ml it's the leanest bottle the house makes. Contains sulfites.
