Gelbmöstler, Nägeles and Schweizer Wasserbirne are not varieties you will find in a supermarket. They're old Swabian perry pears, hand-picked from standard orchards, and together they make up 98 percent of this bottle. Almost everything else is spice. That ratio is the point. No juice blend is hiding the fruit, so you get ripe pear on the nose and again on the palate, held up by tannins the pears bring themselves. Winter spices sit alongside rather than over the top, and cinnamon is declared as an allergen. Like Mirabellengold, it can be served warm. Stand the sealed bottle in a 55°C water bath for half an hour, then open it carefully with a cloth. Cold, it goes at 8 to 10°C with gingerbread parfait and spiced pear, or squared up against blue cheese. 52 calories per 100ml.
