ViSecco exists because sommeliers asked for it. The PriSecco classics are fruit-driven and sweet by design, and hospitality professionals wanted something drier that still had aroma to work with, so Manufaktur Jörg Geiger built a range around dealcoholized organic wine instead of juice. Sauvignon Blanc is the base, run through the house vacuum distillation so the wine aromatics survive, then filled out with orchard fruit and hand-picked herbs, blossoms and spices. The colour is a warm dark straw and the perlage runs lively and slightly coarse. Vineyard peach and ripe mirabelle lead, honeyed notes sit through the middle, and fine wood and sage show up behind them before the finish turns dry and faintly mineral. Serve at 8 to 10°C in a sparkling glass with prawns, pea soup, grilled pumpkin, or chicken with rice and yellow curry. 30 calories per 100ml. Contains sulfites.
