Peach is the whole idea. Carl Jung takes dealcoholised Spanish wine, carbonates it, and flavours it with natural peach aroma only, no synthetic stand in. The result sits closer to a bellini in a bottle than to a straight sparkling wine, with lively bubbles and a touch of residual sweetness that keeps it from drying out. Serve it cold, at 6 degrees Celsius or straight over ice, either on its own as an aperitif or as the base of a peach punch. It runs about 30 calories per 100ml glass, the highest in the sparkling lineup, which is what the fruit sweetness costs. This is the bottle for when the room wants something obviously fruity rather than something imitating dry sparkling wine. Carl Jung files it with the specials, alongside the herb version and the alcohol free mulled wine.
