German Riesling grapes, which is unusual in this range, since most of Carl Jung's base wine comes from Spain and the wider EU. It is made as wine first, dealcoholised, then carbonated, so the fizz is added rather than fermented in. Riesling holds its identity through that process better than most grapes, and it shows. Green apple and peach lead, the acidity stays elegant instead of sour, and the finish runs longer than the price suggests. Carl Jung recommends it as an aperitif or with seafood, which is roughly what a dry sparkling Riesling does at a table anyway. Serve at 6 to 8 degrees Celsius. Roughly 21 calories per 100ml glass. Worth choosing over the standard mousseux if you actually like Riesling, because the varietal character is the whole reason this bottle exists.
