An odd one, and deliberately so. Carl Jung takes gently sparkling dealcoholised white wine from Spain and adds fresh herbal extracts of oregano and thyme plus a hint of ginger, which puts it somewhere between a wine and a savoury aperitivo. It is not trying to imitate anything. The herbs give it a green, slightly tangy freshness that earns its place in situations where fruit forward drinks get boring fast, particularly with food and particularly in hot weather. Serve it cold, 6 to 8 degrees Celsius, on its own or over ice. Roughly 18 calories per 100ml glass, among the lightest things the house bottles. Carl Jung files it with the specials, next to the peach mousseux and the alcohol free mulled wine. It is the bottle to open when you want the room to ask what it is.
