Prosecco gets its character from a second fermentation in stainless steel tanks rather than in the bottle, which is what keeps the style fresh and fruit forward instead of bready like Champagne. Edenvale's Premium Reserve version holds onto that, with pear, green apple and white peach up front, a hint of citrus blossom, and soft bubbles over a gently off dry palate. Alcohol is removed after fermentation, leaving less than 0.5 percent by volume, zero standard drinks and roughly 24 calories per 150ml glass. Serve it properly cold, around 6 to 8 degrees, in a flute or tulip so the bubbles stay fine. It works as an aperitif, a toast, or the base of an alcohol free spritz. Prosciutto with melon, burrata, dumplings and lemon tart are all natural partners.
