Sparkling Aperitivo

This was Edenvale's first move outside straight varietal wine, opening a range of infused botanical drinks. The reference point is obvious, being the bittersweet orange aperitif that anchors an Aperol Spritz, and the build here is a dealcoholised wine base with sugar, natural flavours and colours, and a light sparkle. Bitter citrus leads, herbs sit behind it, and the fizz keeps things from turning syrupy. Alcohol comes in under 0.5 percent, the same territory as fruit juice, so it counts as zero standard drinks. It is ready to pour with no mixing required, though the traditional serve is over ice with a slice of orange. Italian aperitivo habit says pair it with something salty in small portions, so olives, crisps, smoked salmon crostini or a plate of cured meat and cheese.
