Edenvale's best known bottle is this one, the everyday sparkling in the classic range. Ripe apple leads, with subdued tropical fruit and citrus behind it, and the palate stays clean as zesty acidity balances the fruit. Alcohol removal happens after the wine is fully fermented, run through a heat pump system that separates out alcohol, liquid and aromatic essence, then returns the essence to the wine so the smell survives the process. Alcohol ends up under 0.5 percent, which is zero standard drinks and roughly what natural fruit juice contains. Use it the way you would use any dry sparkling. Aperitif first, then oysters, canapes, spicy dishes or fresh fruit. It also comes in 200ml piccolos if a full bottle is more than the occasion needs.
