Carl Jung's rosé comes from EU fruit and lands pale in the glass, with raspberry and strawberry doing the work and a soft tannin edge underneath that keeps it from tasting like cordial. Acidity is the reason it stays drinkable across a whole afternoon. It reads fresh and delicate rather than sweet, which is why the house points it at summer eating: salads, grilled vegetables, fish, anything you would put in front of people outdoors. Serve at 6 to 8 degrees Celsius. Roughly 25 calories per 100ml glass. It is vinified as a normal rosé and then dealcoholised by the family process, so it starts from wine rather than from a flavoured base. That is the difference you taste against most supermarket alternatives.
